TECHNIQUE DEFINITION: Freeze Drying is a preservation process is used to remove all moisture from a product with minimal effect on the taste compared to normal dehydration. This is done by sublimation, which is the transformation of a solid directly into a gas. Coffee is freeze dried by placing it into a chamber. Then, the temperature is lowered and the coffee is frozen solid. The water which has turned into ice is then turned into water vapour and the coffee is stored in air tight glass jars.
