PROCESS: Drying
TECHNIQUE DEFINITION: Dried fruit is when majority of the original water content of the product is removed through a certain drying process. This process can be completed by either sun drying the fruit or using special food dehydrators, however the most suitable method for sultanas is sun drying. A short time after the sultanas have been picked, they are blanched, cooled and laid out to dry. They must be dried rapidly, but it can't be so rapid that the outside becomes hard before the moisture from the inside has been evaporated. The sultanas are then left to dry for a certain amount of time before being packaged.
